Lemon curd



Okay so it isn’t really like a mousse.. but its not really a dessert its like a slimming world version of a lemon curd that I adore with fresh fruit for breakfast or if i’m having for dessert i will crumble a digestive biscuit over the top almost like a cheesecake! Get your arm muscles ready!


This makes a lovely bowlful that will keep in the fridge for up to 5 days and is just as nice frozen into lollies!

1 large lemon, zested and juiced into a heat proof bowl

2 large eggs

5 tbsp low fat natural yogurt or quark.

3 tbsp sweetener (or to your desired taste)

  1. add the eggs into the lemon and whisk to combine.
  2. Place the bowl over a pot of simmering water and whisk constantly for 10-15 minutes or until the eggs turn really nice and thick.
  3. remove from the heat and whisk in the sweetener and yogurt.
  4. Let cool completely before covering with cling film and refrigerating.

I hope you give this recipe a try it really is different from just having a normal yogurt and the best thing is you can snack on it all week with delicious berries and apples.
